1 cup cooked quinoa
2 cups kale, chopped
1 cup cherry tomatoes, halved
½ cup corn
1 scallion, chopped
1 garlic clove, minced
zest and juice from 1 lemon
2 tablespoons extra virgin olive oil
salt and freshly ground pepper, to taste
freshly grated Bellevitano cheese or your favorite cheese, optional (leave out for vegan version or use nutritional yeast)
Gently toss all ingredients together in a bowl.
